Tunisian Grilled Salad – Slata Mechouia
Ingredients (6 to 8 servings):
- 3 round or long green peppers
- 3 spicy peppers (adjust to taste – optional)
- 1 eggplant
- 5 tomatoes
- 3 onions
- 2 garlic cloves
- Salt
- 1 tsp ground caraway
- 1 tsp ground coriander
- Extra virgin olive oil
For garnish:
- 2 hard-boiled eggs
- Olives, capers (optional)
- Canned tuna (optional)
Preparation:
- Wash all vegetables. Grill peppers, tomatoes, onions, eggplant and garlic over open flame or BBQ.
- Once skins are charred, place vegetables in a plastic bag to steam. Peel skins when cooled.
- Remove seeds and blend or mash (don’t make it too fine).
- Add salt, caraway, coriander and a drizzle of olive oil.
- Pour the salad into a plate. Decorate with tuna, eggs, olives and capers as you like.
