Tunisian Grilled Salad – Slata Mechouia

Salade Mechouia

Ingredients (6 to 8 servings):

  • 3 round or long green peppers
  • 3 spicy peppers (adjust to taste – optional)
  • 1 eggplant
  • 5 tomatoes
  • 3 onions
  • 2 garlic cloves
  • Salt
  • 1 tsp ground caraway
  • 1 tsp ground coriander
  • Extra virgin olive oil

For garnish:

  • 2 hard-boiled eggs
  • Olives, capers (optional)
  • Canned tuna (optional)

Preparation:

  1. Wash all vegetables. Grill peppers, tomatoes, onions, eggplant and garlic over open flame or BBQ.
  2. Once skins are charred, place vegetables in a plastic bag to steam. Peel skins when cooled.
  3. Remove seeds and blend or mash (don’t make it too fine).
  4. Add salt, caraway, coriander and a drizzle of olive oil.
  5. Pour the salad into a plate. Decorate with tuna, eggs, olives and capers as you like.
