Kermous – Olive Oil Marinated Dried Figs

Category: Traditional Tunisian preservation

Preparation time: 15 minutes

Ingredients:

  • Dried figs (preferably untreated)
  • Extra virgin olive oil (organic if possible)
  • 1 generous pinch of fleur de sel (or sea salt)

Preparation:

  1. Using a clean cloth, rub the figs well to remove any dust or residue. Make a small incision on the side of each fig. Steam for 5 to 10 minutes.
  2. While still warm, gently place the figs in a clean glass jar. Pack them tightly without leaving gaps.
  3. Pour in the olive oil until the figs are fully covered. Seal the jar tightly.
  4. Store in a cool, dark, and dry place away from heat and humidity.
