Kermous – Olive Oil Marinated Dried Figs

Preparation time: 15 minutes
Ingredients:
- Dried figs (preferably untreated)
- Extra virgin olive oil (organic if possible)
- 1 generous pinch of fleur de sel (or sea salt)
Preparation:
- Using a clean cloth, rub the figs well to remove any dust or residue. Make a small incision on the side of each fig. Steam for 5 to 10 minutes.
- While still warm, gently place the figs in a clean glass jar. Pack them tightly without leaving gaps.
- Pour in the olive oil until the figs are fully covered. Seal the jar tightly.
- Store in a cool, dark, and dry place away from heat and humidity.
